Ingredients
4 eggs
30 g of stevia sweetener (or 70 g of brown or regular sugar)
350 gr of greek yoghurt, unsweetened (or any yoghurt)
40 g of corn starch
4 g of yeast or baking powder
Lemon peel
Vanilla essence (one teaspoon)
Preparation
- To make the yogurt cake, separate the egg yolks from the egg whites.
- Add the sweetener to the yolks and beat with an electric mixer. Then add the Greek yogurt, the grated zest of half a lemon and continue to whisk.
- Add a few drops of vanilla essence, sifted cornstarch and baking powder and continue to mix.
- Beat the egg whites that we put aside and then add them to the yolk mixture, stirring slowly from the bottom up.
- Once all the ingredients are well mixed, prepare a 20-22 cm pan lined with parchment paper and pour in the mixture.
- Bake the yogurt cake in the oven at 170°C for about 30 minutes. Once cooked, remove from the oven and allow to cool to room temperature.
- When cooled, sprinkle with a little powdered sugar and cut into slices.
